Cocoa mass: Cocoa mass which is destined to the chocolate industries
requires a different processing than cocoa mass which
we process further into cocoa butter and cocoa powder.
We have dedicated two of our four mass factories in
Zaandam, De Jonker I and De Jonker II, to produce tailor
made mass for the chocolate industries. In this plant
we can adjust the processing conditions and the cocoa
bean blends resulting in a range of mass our customers
need to make the chocolate they want. An important
matter because the chocolate industries are increasingly
interested to outsource mass. The other two, Aurora
I and Aurora II, produce cocoa mass which are processed
further to cocoa butter and cocoa powder at our Eenhoorn
plant in Wormer. In the Aurora I and Aurora II we alkalize
the cocoa nibs in various ways to produce mass with
the characteristic color and flavor profiles needed
for our cocoa powders.
